First You have to take at least 4 pieces of Hilsha Fish(Oily Fish Preferably) to make the dish real palatable and the size of the pieces should be little big . After cleaning the Fish with water mix them up with Turmeric powder along with Salt as per taste and it’s a very common practice to Marinate the fish items (Indian style).
After marinating for half an hour or so take a pressure cooker and pour two tea-spoon of Olive/mustard Oil as per taste and as it is hot enough put the Fish pieces along with Onion seeds and allow to fry with sim temperature .
Side by side take one Cup of Basmati rice and soak it with water for say 30 minutes and strain that Rice . Pour it into the cooker and don’t stir it any further so as to keep the fish pieces intact .
Then please put the Cooker lid and allow two whistles and don’t take out the cooker from the Oven and allow the cooker to come to semi hot temperature and sfter thst open the lid and It’s ready…..
“Ilish MacherPulao” or “Hilsha Fish Biryani”. Ready to be served for two persons and you can garnish it with Chilli(Green) .
The Idea and Methods are Her own and it’s for the first time she cooked it though it was quite having a Authentic Bengali Fragrance of Ilish Mach without any tampering.
